February Recipes

So one of the things on my 101 in 1,001 is to try at least two new recipes every month… while I forgot to take pictures of what I tried this past month, I figured I would go ahead and share the recipes anyways because they were both SO.GOOD.

(1) Kale + Quinoa Salad with Lemon Tahini Dressing

This is not my first of Natalie’s recipes from Designer Bags and Dirty Diapers and it surely won’t be my last! While I made some small tweaks, such as leaving out the quinoa and topping the salad with blackened salmon, the salad is definitely a winner..I may or may not have eaten for lunch like, 3 days in a row.

(2) Slow Cooker Beef Paprikash

I love my slow cooker, it is the best little buddy to have in the kitchen because on nights when I can’t be bothered, it always has dinner ready and waiting and makes the house smell so good! I really liked this recipe, and served it over gluten free noodles rather than egg noodles but honestly, either would work fine I am sure.

Hopefully in March I will actually have proof of the recipes to show you but hey, we have to start somewhere right!

101 in 1,001

As I mentioned in my first post, I was inspired by Mackenzie Horan over at MackenzieHoran.com to start my own 101 in 1,001- and what better way to stay accountable than by sharing it with everyone that has access to a web browser!?

So, without further adieu, here goes:

Start Date: 02/01/2015 — End Date: 10/29/2017

Personal:

1.Read 25 new books

2. Get a new camera, and take a photography class

3. No shopping for one month

4. Start a blog (02/2015)

5. Pack lunch for an entire month

6. Pay off credit card

7. Send one piece of snail mail per month

8. Get rid of one thing, every day, for one month

9. Try at least 2 new recipes each month

10. Get my makeup professionally done (can we say contouring?) (03/2015- seriously, Sephora hooked it up; skincare, contouring and I learned how to shape my brows! It was such a great experience!)

The First [Well-Heeled] Step

Blogging.

Where do I even start, aside from the fact that EVERYONE (literally) is doing it.

While I am not Ina Garten, and my internet recipes tend to look nothing like they do online (Pinterest, I am talking to you), and you won’t see me on the next episode of HGTV Design Star, I love to decorate and try to make my cozy rental apartment feel like a home. I also love to put together outfits, shop for the best bargain, and try the newest beauty products.

I have considered starting a blog for quite sometime, and each time I start to hit the “Publish” button something stops me… I am not sure what it is, but today i am going to take the first step.

I was inspired by Mackenzie Horan to start my own ‘101 in 1,001’ and what better way to get that ball rolling than checking something off the list- starting my very own little blog.

I hope that in visiting my little corner of the internet, you find inspiration, you find laughter (because let me tell you, its all fun and games in these parts) and you leave wanting to go on your own little endeavor.
